Banoffee Pie Recipe by Award Winning Chef Ankit

Have you tried a British Banoffee Pie before? A magical tri-layer confection with caramel sauce, bananas and cream that will make your taste buds sing!

What is Banoffee Pie?

Let’s start with the name itself. The word ‘Banoffee’ is a combination of two words actually. Banana and Toffee, which will reveal what is on the inside. A crushed cookie crust, then layers of toffee or caramel, sliced bananas, a cloud of whipped cream and chocolate curls make this stunning dessert.

Banoffee Pie was invented in East Sussex, England in the early 70s, and although this creation is 100% English, many Brits think it’s American because of the luxuriously indulgent nature of this dessert, which is not too English.

How to make Banoffee Pie ?

This recipe is made in 3 parts as follows:-

  • For the Pie Base
    80 gms     Melted Butter
    200 gms   Chocolate Oats Biscuit Crumb

 

  • For the Filling
    115 gms Butter
    115 gms Soft Dark Brown Sugar
    400 gms Condensed Milk (Milkmaid)

 

  • For the Topping
    450 ml Double Cream (Whipping Cream)
    05 nos. Ripe Banana
    01tsp Lemon Juice
    25-30 gms Dark Chocolate Curls/Shavings

 

Method

  • For the base-
    Make crumb of chocolate and Oats biscuit, add butter and mix well. Make thick layer of cookie mixture in pie mould, gently press and keep in fridge for setting.

 

  • For the Filling-  Cook Butter, Brown sugar and Milkmaid together on a very slow heat till thickness and brownish in colour. (Strictly, Don’t give boil)

 

  • For the Topping/assembling –
    * Take out Pie Base, give first layer of milkmaid caramel filling.
    * Cut Banana into slices and give second layer of Banana Slices on the Top of caramel Layer.
    * Give third layer, Pipe whipped cream o
    n top and dusting with cocoa powder.
    * Decorate with Chocolate Shavings and dusting with Icing sugar.
  • Serve chilled.
